This is one of my most requested recipes and can also be made into muffins. Soula (my sister) and I could eat it every day. And, when my friend Karina opened her coffee house, I told her about my "banana muffins." She told me she didn't like muffins but would try them. Turned out she loved them so much she bought me supplies to make muffins for the coffee house. I hope you enjoy them as well....
1/4 Cup sugar | 1 & 3/4 Cups flour (your choice) |
1/2 Cup vegetable oil | 2 Tsp. baking powder |
4 Egg whites, slightly beaten | 1/2 Tsp. baking soda |
3 Medium size very ripe bananas | 1/4 Tsp. Cinnamon |
1/4 Cup applesauce | 1/4 Tsp. nutmeg |
Spray a loaf pan with cooking spray, coating it all over and set aside.
In a bowl combine the flour, baking powder, baking soda, cinnamon and nutmeg. In another bowl combine the slightly beaten egg whites, sugar and oil. Beat these ingredients till well mixed. Add the bananas and applesauce and blend together. Pour into the flour mixture and mix together, just till blended. Pour into the greased loaf pan. Bake in a 325 degree oven for about an hour until the top of the loaf is brown. Remove from the loaf pan and let cool before slicing.
